Extra Brut Classic Method

After a long aging in the bottle, this sparkling wine presents a blend of elegance, freshness and harmonious complexity. Its perfect balance originates from Pinot Noir grapes, clone 386, grown in the winery’s own vineyards having a predominantly calcareous structure of unquestionable value, set on hillsides at 300 to 500 metres above sea level.

This is an excellent aperitif and accompanies all kinds of entrees.

Grape harvest:
Traditional, hand-picking in crates.

Gentle pressing of whole grapes to obtain and ferment only 40% of first pressings at a controlled temperature. Ageing in steel tanks until spring on its own yeasts.

Prise de mousse:
The cuvée is created by blending current vintage wines with a good 25% of wines from older vintages, aged in magnum bottles, to provide complexity and uniqueness.
Tirage with yeasts selected within the company and ageing on the yeasts for at least 30 months. Dégorgement and a further 3 months of evolution before being offered for sale.

Notes for tasting:
Great Method Classic, straw yellow colour with antique gold reflections, creamy, fine and evanescent froth, bouquet in perfect balance between fruity notes of white-pulp peach and pear, hints of roasted nuts and fresh bread. On the palate it has an elegant creaminess with a long and persistent after-taste that is rich in savoury and citrusy sensations.
