Farfalla Extra Brut

Farfalla Extra Brut represents the essence of the Ballabio style. After a long refinement in the bottle it is a synthesis of elegance, freshness and complexity. Its balance comes from the Pinot Noir grapes, coming from proprietary vineyards with a predominantly calcareous-clayey structure set on hilly sides between 300 and 500 meters above sea level.

Traditional by hand in 18 kg crates


Soft pressing of the whole grapes to obtain and ferment only 45% of the free-run must at a controlled temperature. Aging in steel tanks until spring on its own yeasts.

Secondary fermentation:

Assembling the Cuvée using, together with vintage wines, a good 20% of wines from old harvests aged in heat-conditioned stainless steel tanks to give complexity and uniqueness. Tirage with selected yeasts in the company and refinement in the bottle for at least 30 months. Disgorgement and further 2 months of evolution before being put on the market.
